Kitchen Shift Junkless Tortilla Soup

Happy Sunday friends! It’s been a minute since I have posted on the blog and I am excited to get back into a routine of sharing here on the site. OK! Let’s get to this recipe. Many of you may know that I am a mother of two and both my kiddos participate in sports. It keeps our weekday and weekends very busy and full. My daughter is in the peak of high school volleyball season and on match nights we walk in the door anywhere from 9 to 10pm! The slow cooker was absolutely designed for nights like this. A few pro tips.

When I use the slow cooker- I want to just DUMP it in and go. That’s the beauty of it right? Its 7am- you want to just open a few cans, measure a few items- DUMP and GO! So I would suggest prepping a few things ahead of time. For example, I will do my grocery shopping today (Sunday) but the soup will be made and served on Tuesday. So today, I will roast the veggies, peel the chicken from the rotisserie (you can boil or roast chicken and shred yourself but the rotisserie is a short cut). I will refrigerate these items and then everything just dumps in on Tuesday morning. The other cool thing about this recipe. No junky seed oils, or condensed soups with filler and questionable ingredients. This is a recipe with WHOLE FOODS. It packs protein, fiber, and micronutrients. It was a 10/10!
